  With only a few fine dining encounters in my life, this has been another delightful experience.
  
  Walking along the promenade toward El Carbon, there was already a relaxing yet vibrant atmosphere to the strip. As we entered the restaurant, we were offered either a table inside, or outside along the marina. We chose to dine outside, overlooking the water and the docked yachts. Other patrons chitchat making for background noise, the soft breeze flowing across our table, and the sun setting over the pier made for the perfect ambience.
  
  In spite of sitting outside, cleanliness was top notch. No dirt or any residue from the breeze. Spotless cutlery and tableware were presented. Overall restaurant was also clean and felt almost new.
  
  Service was to a high standard, the waitress assigned to our table was regularly checking up on our table to make sure everything had been attended to.
  
  Food was incredible with the exception of one thing. First came the entree of tortilla tarts (which the waitress recommended we start with). The dish came well presented, and each tart and a unique flavour to it. The only disappointment with the dish was that the tortillas were a little stale, making the crunch a little chewy. Between two of us, we shared a skewer platter (cannot remember what the dish was called, nor cannot find it on their current menu, but was around $90) which included four generously sized skewers in a range of meats. All of it was deliciously seasoned and included a few sides. I would recommend this dish for anybody that's unsure what to order (note** this dish is for two people).
  
  Overall, extremely impressed by the evening on the promenade. Would visit again once my wallet allows me to.
